2 tsp butter2 stalks of celery, chopped1 small onion, chopped1 carrot, peeled & chopped2 cloves of garlic, mincedEight cups hen broththree cups water1 small Parmigiano Reggiano Rind, non-obligatory18 oz spinach cheese tortellinihalf tsp recent floor pepperhalf tsp floor nutmeg2 cups child spinachsalt to styleParmigiano Reggiano, grated (non-obligatory)
